Cauliflower Fried Rice
Ingredients
1 package of cauliflower rice (Sprouts and Trader Joe's both carry it)
1 1/2 cups shredded carrots
1 1/2 cups broccoli florets chopped small
1/2 onion chopped small (I chop mine really small because some of my family doesn't care for cooked onions)
4 garlic cloves minced
2 tsp olive oil
1/8 cup liquid aminos (your new soy sauce instead of soy sauce which is no good for you)
2 eggs
salt and pepper to taste
2-3 cups cooked chicken or whatever amount you want (lean beef or shrimp would also work)
Sauté all the veggies except the cauliflower in olive oil in a large skillet
Push veggies to the side and cook the egg in the same pan
Mix together veggies and eggs
Add garlic, liquid aminos, and salt & pepper
Add chicken
Mix all together
Add cauliflower rice and stir and mix
Cauliflower rice has a tendency to get soft rather quickly so once you add it, you only need to cook for 2-5 minutes and your done.
