Banana Bread
I grew up with my mama making banana nut bread quite often. Smells of that sweet hearty goodness still evoke a childlike excitement in me that wants to run down the stairs and grab a slice fresh out of the oven. It doesn't matter the time of day, 1st thing in the morning or late at night after all the kids are asleep, there is something magical about turning almost wasted food (overripe bananas) into a masterpiece. However, the adult in me that works hard to achieve my nutrition and fitness goals, isn't as excited about cups of sugar, flour, and butter going int my family's foods.
Ingredients
3 eggs
3 bananas
1/2 cup applesauce
1/2 cup honey
2 cups whole wheat flour
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp sea salt
1 teaspoon cinnamon
1/2 tsp vanilla
desired about of walnuts, chocolate chips, or whatever else you'd like
Preheat oven 350 degrees
Grease a loaf pan with coconut oil
Beat eggs, banana, apple sauce, and honey
Mix all dry ingredients together
Blend everything together and pour into coconut oil greased loaf pan
Bake 50 minutes or until knife goes in and comes out clean
